I had originally published this recipe years ago, but it was time to revamp it, take new pictures, and add some side dishes too!

The recipe for salmon with apricot glaze is so incredibly easy and also very kid-friendly. When my meal plan group had this dish, many of them were surprised by how much their families liked it! I think a little sweetness can always help sway people. 😉

How to Make Apricot Glaze for Salmon:

  1. Stir together dijon mustard and apricot preserves.
  2. Spread over seasoned salmon.
  3. Broil.

That’s it! The apricot preserves add a sweet and tart flavor, while the dijon mustard gives it a little kick and depth. It’s the perfect combination of flavors, I think I’ll need to try it on chicken next.

Best Salmon for Apricot Glazed Salmon:

A common theme I hear about salmon is that people don’t like the taste of it or that salmon tastes too fishy. And I have a solution to this! (Or at least something that’s worth trying.) The benefits of salmon (they are a great source of omega-3 fatty acids, which is a healthy fat that many of us are short on. It’s why I’m always working on more salmon recipes for my meal plan group, it’s a really important food!

But, while I personally love any and all salmon, I know that others find the flavor a bit strong. Different varieties of salmon have different flavors. So if you typically find wild salmon too strongly flavored, I would recommend trying farm-raised salmon.

Normally, I would always say that wild-caught salmon is my first choice. For nutrition, for sustainability, for supporting local fisheries! But if you won’t eat it at all, you’re missing out on the benefits, so it’s important to find a variety that works for you. (Both in terms of flavor and price.)

What to Serve with Apricot Glazed Salmon:

As you’ll see below, I included a side dish for this recipe for salmon with apricot glaze. This quinoa stir fry is reminiscent of quinoa fried rice and it’s a great mix of grains and veggies. I always aim for a protein, vegetable, and grain/starch component in all of my weeknight dinner ideas. (Healthy fats, too but they aren’t always their own component.) Apricot Glaze for Salmon Recipe


Description

Learn how to make this Apricot Glaze for Salmon Recipe. It’s so EASY and quick, the whole meal (side dishes included) takes just 30 minutes!


Ingredients

  • 2 Tbsp. olive oil, divided
  • 1 cup quinoa
  • 1 1/4 cups chicken broth
  • 1 1/2 lbs. salmon fillet (4 6-oz. fillets)
  • 1/2 tsp. salt (divided)
  • 1/4 tsp. pepper (divided)
  • 1/3 cup apricot preserves
  • 1 Tbsp. dijon mustard
  • 4 green onions
  • 2 cloves garlic
  • 1 yellow pepper
  • 1 medium zucchini
  • 1 cup frozen peas (thawed)
  • 2 Tbsp. soy sauce

Instructions

  1. Bring quinoa and broth to a boil. Reduce heat, cover and simmer until liquid has evaporated, about 10-15 minutes. Fluff with a fork. *Note, this is less than the recommended amount of liquid.
  2. Prepare ingredients: Preheat broiler to high. Season salmon with 1/4 tsp. salt and  1/8 tsp. pepper. Stir together apricot preserves and dijon mustard and spread over salmon filets. Slice green onions. Mince garlic. Chop zucchini. Chop pepper.
  3. Heat large skillet over medium high heat. Add remaining 1 Tbsp. oil to pan, and when it’s hot, add vegetables to pan, stirring occasionally for about 7-8 minutes.
  4. While the veggies are cooking, broil the salmon on the second or third rack for about 10-12 minutes, or until cooked through.
  5. When the quinoa is done cooking, add to veggie pan and toss together. Add soy sauce to pan and stir until the liquid has evaporated.

Notes

  • This recipe includes a vegetable and grain side dish, but obviously if you’re just looking for the apricot glaze for salmon recipe you can skip right to those steps.
