Easy shrimp fajitas definitely fit the framework for my easy and healthy weeknight dinners. And I’m a bit picky on the sort of meals that fit – it’s a tough criteria! They’ve got to be delicious, they’ve got to be healthy, they’ve got to be family approved, and they’ve got to be FAST! So how does this dinner stack up?

So there you have it, if you’re looking for an easy and healthy dinner – easy shrimp fajitas are it. (If you aren’t, what is your weeknight dinner secret?)

If you’ve got young kids, fajitas (and tacos, burritos, etc.) can be tricky to eat so I’ll usually serve the components separate for a meal like this. You can serve the shrimp and pepper mixture in one section, various toppings in the other, and the tortilla in the another. Sometimes I’ll turn the toppings into a little salad and serve it with dressing.

And don’t forget about the mexi rice and beans! I started including sides in my weeknight dinners because…well, you may need them! Feel free to switch it up based on your own preferences, but after I started creating recipes for my healthy weekly meal plan, I realized that sides are an important piece of easy dinners, too. If you have a main course that comes together in 30 minutes, but then you need to add sides, well it’s not a 30 minute dinner anymore!

Easy Shrimp Fajitas Marinade

The marinade for these easy shrimp fajitas is based off of my sheet pan chicken fajitas which is based off of my mom’s fajita marinade which was one of my favorite dinners as a kid! So now you have the history. It’s a fresh combo of lime juice and oregano and instead of marinating the shrimp in it, we’re just doing a quick pan fry with the seasonings. It’s just as tasty, but a little quicker. I’ve also included a few shortcut ideas in the recipe card, if you want this dinner to come together even quicker.

How do you make shrimp fajitas on the stove? 

You always have the option of grilling shrimp fajitas, but making them on the stove is super easy! The full directions are below in the recipe card, but we start by sautéing the peppers and onions and then we add the shrimp and lime juice and cook just until the shrimp are cooked through. Shrimp make a great weeknight dinner because they only take a few minutes to cook!

How to Make Homemade Easy Shrimp Fajitas

Dinner is ready in 30 minutes, complete with black beans and Mexi rice! You’ll see the full recipe below, but we’re going to saute the veggies, add in the shrimp and then roll the shrimp and peppers into a flour tortilla and top with all of the traditional fajita toppings. The fajitas take about 10 minutes to cook, that’s it!

I kept the toppings really easy for this meal with sour cream, shredded cheese, chopped tomatoes and shredded lettuce but you can always add more! Or if you have bigger appetites, extra toppings can help bulk up the meal. Here are few other ideas:

  • roasted corn
  • black olives
  • pickled jalapenos

Ingredients

  • 16 oz. shrimp (peeled, no tail)
  • 2 bell peppers (1 yellow, 1 red)
  • 1 yellow onion
  • 2 cloves garlic
  • 1 lime (2 Tbsp.)
  • 2 tomatoes
  • 1 head romaine lettuce
  • 2 Tbsp. olive oil, divided
  • ½ tsp. garlic powder
  • ½ tsp. cumin
  • 2 cups chicken broth
  • 1 cup tomato sauce
  • 2 cups minute rice
  • 1 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 15 oz. can black beans
  • 8 oz. shredded cheddar cheese
  • 4 oz. sour cream
  • hot sauce or salsa

Instructions

  1. Prepare ingredients:
    Thaw shrimp.
    Slice bell peppers in thin strips.
    Slice onion in half moons.
    Mince garlic cloves.
    Juice lime.
    Chop tomatoes.
    Chop lettuce.
  2. Rice: heat 1 Tbsp. olive oil over medium high heat, once it’s hot, add garlic powder and cumin to pan. Swirl the spices into the oil and then add broth and tomato sauce. Bring to a boil and add rice to pan. Stir, cover, remove from heat and let sit for 10 minutes. Most of the liquid should be gone. If it’s not, stir rice, and heat for an additional minute or two.
  3. Black beans: pour entire contents of can into a microwave-safe bowl and microwave until hot, stirring every 2 minutes.
  4. Heat large pan over medium-high heat. Add remaining 1 Tbsp. olive oil to pan and when hot, add the onion, pepper strips, garlic, oregano, salt, and pepper. Cook, stirring every minute or so for about 4 minutes. Add shrimp and lime juice to pan and cook for another 2-3 minutes, just until shrimp are warm or cooked through. (If your shrimp are raw, it may take 4-5 minutes.)
  5. Layer shrimp and pepper mixture onto tortillas and add toppings as desired. Serve with rice and beans on the side.

Notes

  • Get your kids involved! They can: help pull together toppings, top their own fajita.
  • SHORTCUTS: pouch of already cooked mexi rice, pre-shredded lettuce.
